The world’s most beloved comfort food gets a makeover—while remaining unmistakably Roman.180 Grammi – Roman Pizzeria opens its new location at Fiumicino Airport, in collaboration with Areas-MyChef, offering a fresh vision of "pizza in teglia" that blends memory and modernity. Located in the arrivals area—recently upgraded and enriched with new services—the new space will be a true gastronomic haven for travelers landing in Rome.

At the helm of the project is Jacopo Mercuro: pizzaiolo, artisan, and innovator, widely recognized as one of the leading figures behind the revival of Roman-style pizza. More than just a pizza maker, Mercuro is a contemporary interpreter of tradition. He has turned 180 Grammi into a benchmark both in Italy and abroad, also thanks to television appearances such as MasterChef Italia 2023, where he was introduced by Antonino Cannavacciuolo as “a young talent who has turned simple croquettes into culinary masterpieces.”

At 180 Grammi, it’s not just about eating pizza—it’s about experiencing it. The new location offers thin, crispy pizza baked in trays, made using indirect dough methods, long fermentation times, and high hydration, topped with both traditional favorites and original combinations created and tested by Mercuro exclusively for this concept.

Alongside the pizza, the menu features the Friggitoria Romana with its iconic Sampietrini®: fried cubes inspired by the historic dishes of Roman cuisine, recognizable by their signature breading.

Rounding out the menu are indulgent treats like maritozzi and the Fluffy—a soft, sweet creation by Chef Mercuro that blends the concept of pizza and brioche, filled with rich pastry creams and topped with crunchy elements.

The experience is further enhanced by a coffee corner curated by Caffè Vergnano, a symbol of authentic Italian espresso, complementing the food offering in a shared space that is both modern and welcoming. The restaurant’s design celebrates the meeting of tradition and innovation: warm tones like terracotta ovens, the blue of hydrated doughs, and green elements symbolizing sustainability. Wood accents and sound-absorbing ceilings contribute to a cozy atmosphere, while the front seating area offers passengers a relaxing oasis—where every break becomes an opportunity to recharge and discover new, authentic flavors.
