TROIANI

Hailing from the Marche region, Angelo has always been passionate about cooking. After obtaining a hotel diploma, he immediately gained experience in prestigious venues such as Le Jardin (two Michelin stars) e Il Trigabolo (2 Michelin stars).In 1990, with his brothers Massimo and Giuseppe, he founded Il Convivio, which has been a reference point for high-level catering in Rome for over 20 years and boasts numerous awards from food and wine guides, including a Michelin star obtained in 1993, a Star Diamond award in 2000, and The Wine Spectator's "2 Glass" in 2001.In 2005, Angelo opened his fish restaurant Acquolina Hostaria, which obtained its first Michelin Star in 2008.


He is a lecturer at several important higher-education institutions: Gambero Rosso's “Chef Profession”; a specialisation course for students of the American CIA University at the ALMA School in Colorno (PR); the courses of "A Tavola con lo Chef" school.


On top of teaching the school's cooking classes, he holds the role of educational director for the professional cooking school, Coquis .He has participated in several television programmes, including: Eat Parade, Gusto, Cominciamo Bene, Linea Verde, Uno Mattina, Costume e Società, Gambero Rosso Channel, Alice, Sereno Variabile .For F Retail, Angelo creates the recipes of all the dishes of the Assaggia Italia project, which he is a partner of. He is also the creator of the Convivio Troiani travel project.
